THE VINEYARD
Produced with sustainable Chardonnay grapes grown in the Cavedine Valley at 600 meters above sea level, precisely in the San Rocco area, characterized by the presence of an alkaline (rocky) soil. The good ventilation and accentuated temperature range between the day and the note make it possible to express the best varietal characteristics of the grape. The training system is the classic Trentino pergola facing east. The yield per hectare is 70 quintals / ha.
HARVEST
The grape harvest is done manually, through the selection of the best grapes, after having selected grape by grape.
VINIFICATION
Obtained from the white vinification of Chardonnay grapes and subsequent refermentation in the bottle at a controlled temperature. Twenty-four months of aging on the lees gives the peculiar notes of bread crust and a delicate fragrance of yeast.

Alcohol content: 12.5% vol.
Color: pale straw yellow and a fine and persistent perlage
